Personally I'm real partial to JL XD amps because they are small, sound good, aren't THAT expensive and seem to take a lot of abuse.
You could get a refurb JL XD 700/5 to run cabins and sub here for $350:

I have exactly your suggested setup
. 700/5 for cabins and sub and 400/4 running my towers. JL in the cabin and wetsounds icon on the tower. It is a really nice setup. I use the stock 2014 head unit and have the fader run between the tower and the cabin speakers. This makes it easy to control the tower level from the helm.
The refurb sounds like a great idea to keep cost down.
