So I recently purchased my brand new leftover 2015 axis t23. So far I have added all the PNP bags and added a wetsounds 420eq.
I am planning on adding a third amp for the sub and using the 6 channel amp to power the 6 interior speakers.
My question is right now the htx-6 amp is powering 4 speakers, is anyone familiar with for this is set up and what it takes to change to 1 channel per speaker?

I believe the four cabin speakers are bridged to channels 1 and 2 or 3 and 4, the bow speakers each have there own channels opposite of the bridged ones, and the sub is bridged on 5/6 channel.

Steve is correct at least for my boat. Channels 1/2 run the 4 cabin speakers, 3/4 are running the front two, 5/6 are bridged and run the sub. The HT2 runs the towers. It would be really easy to rewire. Just separate the back 4 speakers at the amp and then run each speaker to its own channel. You will remove the sub off channel 5/6, run a highpass filter instead of a low pass, and plug the front RCAs into 5/6 and back RCAs into channel 1/2 and link 1/2/3/4 with the buttons on the adjustment panel.

They don't bridge the back speakers at the amp, they bridge them at speakers themselves so you'll have to run new wires to 2 of the back speakers

Has anyone got improved subwoofer performance by sealing the box and separating the amp? Or is the factory sub not that great?

Factory sub sucks... I upgraded to an Arc Audio 15 with enclosure... used the factory Syn 6 to power... plenty of power and extremely clean.
